VINIFICATION: Classic red vinfication for about 10 days with controlled
Temperature with delicate pumping over and
punching down the cap. After this, the wine is racked
off and it finish its malo-lactic fermentation.
ALCOHOL: 13% vol.
SUGAR: 4 gr/lt
ACIDITY: 5.5 gr/lt
SO2: 80 mg/lt
COLOUR: Intense ruby red.
AROMA:It recalls the Sicilian landscapes, very characteristic and recognizable. Sumptuous and warm aromas of ripe fruit, fruit jam including marasca cherries and plums, with notes of violet and liquorice.
TASTE: It has an excellent balance of tannins and acidity, deep taste, of great thickness and structure and high softness.
FOOD PAIRING: Wine excellent with great roasts of red meat and tasty cheeses.
SERVING TEMPERATURE: 16 - 18 °C
